Have you wondered about what you’d find on your menu in a Chinese restaurant? some of us that love anything rice might still want to go along with “anything rice” what about Chinese fried rice with  shrimps? i was on skype with Miriam Smith a friend residing in Beijing. we began to talk about cultural ways of making rice popular, and she spilled the info about rice and shrimps. below is a recipe she took time to outline  which i believe you’ll find very helpful!

ingredients

  • 2cups uncooked basmati rice

  • 2cups water

  • 1234cup chicken stock

  • 1ham steak (cut into cubes)

  • 12cup frozen peas

  • 2eggs

  • 3 -4tablespoons or peanut oil

  • 14teaspoon salt

  • 2tablespoons soy sauce

  • onion and garlic

  • raw shrimps with skin removed  2kg(desired quantity)

procedure:

  1. Cook your rice To your desired crunchy level.some people prefer it strong and chewable, others like it almost in mash.
  2. Allow the rice to cool
  3. Heat a wok over high heat with 1 tbs. of oil. Add onions, eggs and scramble until cooked. Add ham peas, and garlic and fry for 60 seconds.(add or omit any veggie/meat combo if you like.).
  4. Remove omelet from wok. Clean the wok out a bit so the leftover egg doesn’t burn while you’re heating up your wok and oil again.
  5. Add remaining oil to the wok and heat over high heat until it is very hot,mix with your cooked rice.
  6. Add your chicken stock to the rice; add your raw shrimps and stir to mix.
  7. Stir fry for a while, stirring constantly until there is no liquid left, then chop up your omelet and add it, along with the soy sauce and salt. Stir. add soy sauce and salt to taste.
  8. your rice is ready
